During this session, we will explore the flavor characteristics imparted by different types of wood and discuss the wood options available for smoking. We will then stoke up the fire and smoke a variety of ingredients to sample and integrate some of the smoked goods into recipes. The evening's menu will be based on locally available ingredients at the time of the class.
